Superfood Salad

If you have about an hour to make a salad...this is a jackpot bowl of greens! I've had a few days off of work this week so I've had some fun in the kitchen. A cutting board, a knife, and some veggies...instant therapy!































Here is what you will need: 

Salad ingredients: 
- 1 bunch kale, leaves chopped small
- 1 broccoli head chopped small 
- Juice of 1 lime
- 1 small beet 
- 1 carrot thinly sliced
- 1 ripe avocado peeled and sliced
- 3-4 sprigs fresh basil sliced thin
- handful of blueberries 

Blueberry ginger dressing ingredients: 
- 1/4 c. blueberries
- 1/2 in. piece of fresh ginger peeled and chopped
- 2 Tbs. raw apple cider vinegar
- 1 Tbs. maple syrup 
- big splash of water
- salt & pepper
- 1/4 c. grapeseed oil 

Omega seed sprinkle ingredients: 
- handful sunflower seeds
- handful pumpkin seeds
- 2 Tbs. flax seed
- 2 Tbs. chia seed
- 1-2 Tbs. hemp seed 
- handful of puffed quinoa 
- pinch of coriander 

Directions: 
1) In a large bowl, massage the kale and chopped broccoli with lime juice massaging until the kale leaves are tender. Chop and prep all the salad ingredients and set aside. 

2) Make the dressed by combining all the ingredients in a food processor until smooth. 

3) In a medium saute pan, combine all of the omega seed sprinkle ingredients over medium heat. Sprinkle a little coriander and toast the seeds. Remove from heat. 

4) Arrange the massaged kale and broccoli on your serving plate. Top with vegetables, dressing, and omega sprinkle. Enjoy!

Flavors of Denver


My absolute favorite way to explore a new area, vacation or have an adventure is through food. I like to experience life by tasting and sipping my way down the city streets of San Diego. Savoring the flavors of a chi latte on the California shores with my best friend by my side was memorable - because of the flavors and the company.  Naturally, when moving to Denver, I was most excited to try new restaurants and coffee shops. There are so many amazing places in this incredible city that my mind gets overwhelmed and my tastes buds quiver just thinking about it. For those of you that live close to the Denver area- here’s the 4-1-1 on the places I have tried so far. And for those reading from a distance, be jealous, move here and be prepared to be hungry after reading this post. 

Steam: Coffee shop
This super trendy, urban coffee shop on South Pearl St is the perfect balance of simplicity and uniqueness. I loved the airy feel because of all the windows and the garage door that was raised to allow a floor to ceiling opening for the Colorado breezes to come through. My pour over coffee was dark, bold and flavorful. 






Sassafras: Breakfast and Lunch
Located in the Highlands of Denver, this beautiful home turned restaurant serves up the most delicious, decadent Southern Creole breakfasts. It is extremely popular so my sister and I sipped on the complementary coffee outside, bouncing Halle on our laps until we were seated. The staff was friendly, helpful and made the experience memorable. I had Truffle Mushroom grits with peas, goat cheese, and a fried egg sunny side up. It was savory, rich and I finished every last bite. My sister had the fried green tomato Benedict and she raved about the uniqueness of the dish. The coffee was above average, which is huge for this coffee loving girl.























The Populist: Lunch, Dinner, Drinks
 If you’re looking for a cool energy spot The Populist is it. This hipster restaurant located in LoDo has an amazing atmosphere and funky family style seating on their patio. Our server recommended sharing everything you order and getting about 5-6 items between the two of us. This seemed excessive so we stuck with 3 but were not totally satisfied afterwards. The menu was difficult to understand because there were no descriptions of the food, so it’s a great place for the foodie adventurer. The portions were small but the flavor was big. I would recommend the Populist as an appetizer and drink stop on your way to your dinner destination. 



True Food: Breakfast, Lunch, Dinner
 At the moment, this might be my favorite eatery in Denver. It’s healthy, fresh dishes are appealing to me and I have yet to try something that I don’t love! It has clean, retro vibe that goes along with their clean eating menu. This is the Core Four’s favorite restaurant so it made sense that we choose to eat here as one of first meals together all in the same city again. If you’re in the Cherry Creek area looking for the perfect lunch spot, True Food will be sure to deliver a meal that will not disappoint any healthy eating pallet. 
  *(Did you know, it’s been over 2 years since the Core has all lived in the same city?) 




This only scratches the surface of amazing places in Denver. I am excited to keep exploring the city through flavors, food and of coffee. If any of you have recommendations I would love some new suggestions.

My Public Apology





Here goes...I am sorry. I am sorry for how obsessed with food I am. I am sorry that I love to take pictures of my food, post pictures of my food, and send texts of food to my bests. I am sorry that all day long, I am constantly thinking about food and the joy it brings me.


When should I eat next? What should I eat? What should I make for dinners and lunches this week?

Even right after I eat, I am still thinking about it. My husband laughs at me because even after we stuff our faces and sit down to veg in front of the tv at night, I will see a commercial for some restaurant or food place or DAIRY QUEEN and say out loud "Ooo! That sounds so good right now!" He thinks I'm crazy because even when I am so full I can always find something that I think sounds good.

But really, Im not sorry. I am not sorry that I like to show my love for others through food, through new flavors, and that I love to feed my body the nutrients it needs in the most tasty way possible.

I don't mean to post meals to show off, or to show how fancy my meals look. I genuinely love cooking, it is a passion of mine.I love making bright colorful meals and sharing them with those I love.

Mekenzie's Colorado Picks!

I'm a foodie. I'm just going to go ahead and admit it now. I LOVE to eat out. After moving to Denver, I have developed quite the list of delicious hot spots. Let me share with you some non-negotiables when picking a spot for date night or dinner with the girls...

High quality food is pretty important to me. My daily diet is fairly clean so I generally choose places that serve high quality organically & locally bought foods as much as possible. So many restaurants are cooking with nutritious oils and  preparing their dishes clean as well so you don't have to compromise your healthy eating habits when you want to splurge on a night out.

Eating out isn't just about the food. I have a patio, roof top, and outdoor seating obsession. Atmosphere is just as important as the taste and quality of the food.

 Although my list is VERY VERY long. I thought I would get the ball rolling and share some of my favorite Denver spots so you can start checking them off your list.

1) Root Down:(Lower Highlands)  

Root Down Favorites- 

-"Field to Fork" mentality. They serve foods that are local, organic, and natural.
- The patio you never want to leave  
- Affordable happy hour that doesn't end until 7:00 p.m.!
- Delicious drink menu 
- Gluten free and vegan options
- Upbeat and trendy atmosphere

Shine favorites- 

- Clean, simple, and satisfying: Thats their mantra. They not only use local organic ingredients but they also bring nourishment to their foods by way of soaking their grains, making home made healing broths, and use the highest quality oils and salts. 
- Open garages for summer time 
- Best service I have ever had. I'm not kidding you! Erin and I wrote our waiter a note thanking him for the most quality service we've experienced. 
- They offer cooking and nutrition classes, live music, yoga, support groups, and local speakers. Calendars are available on their website.
- Dairy free, vegan, and gluten free options

3) True Food Kitchen:(Cherry Creek) 

TFK Favorites- 

- Beautiful atmosphere. Full of energy and elements of nature. The restaurant is "green certified." Every part of the space reflects this through the use of environmentally friendly  elements. 
- Upon arrival. Your parties name is entered into their ipads reservations system with guests' phone number. This way you can feel free to shop around while you wait and they will send you a text when your table is ready. No sticking close because of a buzzer or hanging out in the restaurant while you wait. 
- They offer fresh juice
- Local and organic foods
- Community seating areas 
- Delicious cocktail menu 
- Seasonal menu: Their dishes change based on seasonal vegetables and produce to give you the best and most quality nourishment. 
- The kitchen is open with prep tables being placed almost inside of the dining space to provide the diners the ability to look and see whats being put into their food and onto their plates.

4) Jelly: (South Pearl)

- Hipster atmosphere and staff is very engaging and nice
- Full coffee bar with unique drinks
- Delish. Jelly DUH. They make different types of Jelly depending on the fresh produce they have for the day.
- Simple staples like
 a bowl of cereal or unique dishes can be found at Jelly making it a great spot to please different palettes

- *Their gluten free toast is great for those who have a gluten intolerance








5) Linger: (Lower Highlands) 

Linger Favorites-

- $52.80 dinners every Tuesday 
- Approx. 75% of linger was built with reclaimed, reused, and recycled materials 
- They use local, organic, and sustainable products 
- They recycle and compost whenever possible 
- They use the worlds healthiest oil to do all their cooking

Fish are friends....AND food.



Ahh fish. A food I love to eat but am not always super excited to make. Why? Fish can be so hit or miss. The nutritional benefits are off the charts -omega 3's, vitamin D, countless vitamins and minerals. But it can also stink up your kitchen and make your husband turn up his nose at the dinner you've prepared. Recently, the Hubs and I have been trying to add more fish into our weekly meal plans.


Tilapia is our go-to choice, because of the nutritional stats and its easier on the wallet than some of the other types. We do love a good salmon filet every now and then though! We've discovered a healthy way to make our fish taste better. Because who likes a bland piece of white fish?

Alas, our creamy fish sauce.

Its so easy its stupid. Are you ready for it? Here ya go:


My favorite brand from King Soops.

Start with some non-fat greek yogurt.
Add what ever spices/juices you like.
Add to your fish once it is finished cooking.

Sound easy enough? It is! The greek yogurt packs an extra punch of protein to a delicious meal.

We've been experimenting with some different flavor combos. Our recent faves to add to our greek yogurt:

-lime juice, worchestershire (how to heck do you pronounce that?), onion powder

-lemon juice, garlic, soy sauce

-cumin, chili powder, garlic

-lemon juice, parsely, salt and pepper

-Mrs. Dash Southwestern Chipotle, lime juice

Any of these creamy sauces on top of any kind of fish, some brown rice, and edamame has become a staple in our weekly rotation.

Salad Season!

It hit the 70's this past week so i'm officially in "spring mode." I love Spring in Colorado. Everyone is out and about starved for sunshine and ready for hikes, bike rides, runs, volleyball and all other outdoor activities that have been on the back burner all winter long.

I like salads best in the spring. More than any other season I really crave all kinds of yummy salads right when the warmth hits. Its something light, but mostly something that will be quick and easy allowing you to stay outside and soak up the great weather as long as possible before coming in for dinner.

Salads are great because you can chop up veggies and cook your meat at the beginning of the week and have all of your salad necessities on hand hot n' ready to throw onto some greens when your ready for meal time.

Here are some favorite salad combos to get your creative juices flowing. You can do sweet or savory. Meat or meatless. veggies or fruits. The options are endless and you'll never get bored.

Berry Goat Cheese Salad: 

To Toss In:

Birds of a feather...


Have you ever seen the food that comes out of a bird feeder? Lots of small black speckles, browns and greys- maybe a touch of red all mixed inside that tiny tube of seeds. I like when my cupboard looks like a bird feeder. Mekenzie and I have nick named our seeds, nuts, grains- bird food. It’s the best kinds of add-in’s to oat meal and the perfect snack in the after noon. I love bird food more than any other human! And I can promise you that at any given time I will have a container full of nuts and seeds and at least 3 different kinds of super seeds. I'm growing more and more obsessed with these earthly supplements but I started to wonder, “Which one tastes best and is really best for me? ”
So here I am! Coming to you with the latest taste test experiment. Similar to my coconut water taste test, I picked a variety of seeds, grains and nuts- and included some information on how they taste and more importantly what they do for your body.






*Warning this could quite possibly turn you into a bird food addict.*
Chia Seeds: richest plant source of Omega-3 (more Omega-3 than salmon!), they absorb 10x their weight in water (or almond milk!) which helps aid in weight loss because you feel fuller faster and longer; high in fiber, calcium, phosphorus and manganese.
-Tasteless; adds little to no texture to food (maybe a slight crunch); easy to add to almost anything.
Flax Seed: 3 main healthy components- Omega-3s; Lignans- which have both plant estrogen and antioxidant components, about 800 more lignans than other plants foods; Fiber- both in soluble and insoluble types. 
-Wheaty flavor, best if ground so that it can be easily added without effecting the texture of the food you are topping it with. 
Hemp Seed: Highest protein seed, contains all 9 of the essential amino acids, great balance of Omega 3 and Omega 6 fats, contains a good amount of vitamin E. Richest know source of polyunsaturated essential fatty acids. 
-If you’re a vegetarian, this is a great source of protein because it is said to be easily digestible. 
-Rich and nutty in flavor. Unlike flax or chia, the small nuts are flavorful and creamy enough to eat on their own.
Petitas (pumpkin seeds): Abundance of nutrients! Amino Acids, unsaturated fatty acids, and the majority of vitamins and minerals. Rich in beta carotene to support eye health. One ounce contains 9 grams of protein; Anti-inflammatory seeds that supports liver health. 
-Light crunch, green in color and mild nut flavor. Does not have pumpkin flavor at all. 
-Great on salads, oat meal and trail mix. 
Pistachios: Lowest calorie nut, tied with almonds at 6g of protein per one ounce, great source of vitamin B6, potassium, phosphorus and magnesium. It’s an antioxidant powerhouse and one serving contains about 12% of your daily recommended fiber. 
-Strong flavor, creamy in texture.
Farro: Oldest cultivated grain in the world. Very popular in biblical times.  Protein packed grain. 9g per serving. Loads of fiber. Helps maintain low blood pressure, and low blood sugar levels. 
-Wheaty flavor, easily takes on the flavor of whatever you cook it with- spices, herbs or mixed with agave and cinnamon for a morning meal.
Moon Beets: Pre-packaged, organic snack from Whole Foods. Contains, sunflowers seeds, pumpkin seeds, raisins, carrots- all held together by beets, raw honey and some cinnamon. 
-Great flavor! Perfect post workout snack. Contains 10 g of protein and high in fiber. 
My body feels good just reading all the health benefits of the bird food that I am packing into my body. These nuts seeds and grains are so versatile that it is easy to introduce at least one of these into a meal or snack everyday. Try it, your body will thank you! 
This winter I worked at 6 am everyday, so I needed something healthy, but easy to take to work for breakfast. Below is my overnight oats recipe that I have eaten almost morning for the last, 4 months! I’m still not tired of it because it’s that delicious! And of course it contains lots of bird food add-ins. Enjoy my little bird. 

Over Night Oats:
1/2 c. Old Fashioned Oats (Quick Oats turn too soggy)
1 Tablespoon Chia Seed
1 Tablespoon Flax
1/2 Tablespoon Hemp Seed
Sprinkle of Cinnamon
1/2 c. Almond Milk (or Milk substitute, coconut milk, rice milk or soy)
Directions:
Mix the above ingredients before you go to bed in a sealable container. 
In the morning, top with fruit (strawberries, blue berries, black berries, etc.)
This can be eaten cold, or hot- which is how I prefer it. 
Optional add-ins: shredded coconut, nut butter, pecans, walnuts, agave.
